“Me encanta el quesillo. Es suavecito y sabe delicioso con tortillas reciĂ©n hechitas. Me recuerda mucho a Honduras porque eso comĂ­a todos los dĂ­as. Me gustaba mĂ¡s la tortilla doblada y el quesillo sin derretir. Solo me acuerdo que el quesillo era siempre como una pasiĂ³n, solo o acompañado se terminaba rapidĂ­simo. El quesillo olanchano era el que mĂ¡s nos gustaba, lo comprĂ¡bamos en una tienda de lĂ¡cteos. TambiĂ©n, a veces, cerca de la casa en una gasolinera se ponĂ­a un carro a vender, lo traĂ­an fresquito de Olancho, era mĂ¡s chicloso y delicioso. Los del supermercado son mas comerciales, no son lo mismo. Siempre que alguien viene de Honduras es el pedido principal de mi lista! Con tortillas reciĂ©n salidas del comal es una delicia!”

  This simple, yet fantastic treat is the Honduran version of the grilled cheese sandwich. All you need is corn tortillas and the specially elaborated ‘quesillo’, a soft, white cheese with an incomparable texture and a rich taste that comes from our fresh cow milk. The elaboration of this magnificent cheese is a thorough process, which requires hard manual labor in order to achieve its amazing elasticity. Used for toppings and popularly with tortillas, it is without a doubt a staple product, most cherished from the regions of Choluteca and Olancho. Fresh batches are brought daily to the bigger cities and sold off pick-up trucks; freshness is always preferred over the now-available commercial brands off the supermarket shelves.
