This is a year-round dessert in Honduras, well-known in the country overall. Made with strictly native ingredients, it’s one of those things that Hondurans living abroad cannot get their hands on! ‘Rosquillas’ are bagel-like treat, made with cheese, lard, and – you guessed it! – maize. ‘Rapadura de dulce’ is essentially raw sugar cane, sold in blocks and used in all the traditional desserts as the sugar reduction. This dessert is incredibly sweet, and in a region known for sugar production, it’s no wonder the locals are crazy for them. To many locals, especially the rural farmers, a chance is never missed to enjoy one with a cup of coffee, whether for breakfast, as a snack, or even for dessert!
