Tortitas de Papa

“Mi abuelita siempre me hacía tortitas de papa, rellenas de cuajada en el hornito de fogón. Yo las amo y ahora se las hago a mis niños. En aquel entonces, cuando íbamos a La Esperanza mi abuelita nos las hacía con la cuajada fresquita que mandaba a traer. Nosotros, sus nietos, nos sentábamos todos en la mesa felices cuando las hacía. A ella le encantaba vernos comer! Eramos siempre muchos primos cuando estábamos visitando La Esperanza, pero cada quien siempre comía donde sus abuelitos. Ahora que se las hago a mis hijos, les encantan a los tres porque les gusta la papa y también mucho más porque les digo que era receta de mi niñez.”

  Most specialties in Honduras revolve around family, as it most always is with food all around the world. For many, the most simple things, as long as they are elaborated with homemade love, are the best! These potato cakes are great for kids, and great as a quick snack. Mostly made with fresh cheese inside, some versions are made with the delicious and unique ‘cuajada’. This is a cheese product, traditionally made from raw warmed cow’s milk, which is mixed with a special curdling element. Always fresh and wrapped and sold in plantain leaves, it is one of the most delicate cheese products in our country and is definitely enjoyed by many, especially inside a fresh or toasted ‘tortilla’.
