Sopa de Frijoles

“La sopa de frijoles fue una de las primeras recetas que aprendí al casarme. Se la pedí a mi mamá porque cada vez que mi esposo, en aquel entonces mi novio, iba a mi casa y había sopa de frijoles de cena dejaba el plato vacío y pedía una segunda tanda! Siempre me dijo que le gustaba mucho esa sopa de frijoles de mi mamá. Pues comencé a hacerla al casarnos con algunos desperfectos al inicio, a veces dejaba el caldo muy ralo o a veces muy salado, pero dándole mi sazón especial tratando de no perder el sabor de la de mi madre. El aguacate, las tortillitas fritas, el chicharrón y el quesito definitivamente hacen esta experiencia mucho más placentera.Mi esposo ya sabe que el día que pongo a cocer frijoles es el día de sopa, y trae el aguacate y los chicharrones en mano al regresar del trabajo! Ahora mis hijos también son parte de la tradición y les fascina. Me encanta ver a mi hijo menor empinándose el plato y llenándose todo alrededor de la boca y frijoles por todas partes hasta en el pelo!”

Its main characteristic, along with its intense flavor, is the benefits of the nutrients found in beans, which are maximized in this form of preparation. Red beans are soaked until soft and then boiled in water with peppers, salt, pork ribs, and onions to form a rich chocolatey broth. Many ingredients can be added when serving, like yucca, plantain, avocado, fried pork belly fat (‘chicharrón), sour cream, cheese, and even an egg on top! Beans are the greatest form of nutrition for peasant households, since they have a great protein base, with many vitamins, minerals, and fiber. But of course, they are widely loved, and some even say our beloved bean should be considered a national heritage.
